Technical Notes
The Alexander Cameron Limestone Coast Shiraz 2019
The fruit was picked at optimum ripeness and transported to the winery and immediately crushed. Following on from this we fermented the juice on skins for 10-12 days to maximise colour and flavour extraction. The skins were then pressed gently and the pressings pumped back with the free-run juice. The wine was then fermented over a week then allowed to settle and was then racked off lees. The wine under went malolactic fermentation in barrel and then was aged in the same barrels for 12 months. The wine was blended and prepared for bottling with minimal filtration.
Glen Eldon Kicking Back Shiraz Cabernet 2017
'Kicking Back' is the way Australians describe relaxing and having a good time with family and friends, usually around a barbeque. So we decided to create a ready to drink style wine called, 'Kicking Back', to celebrate and enjoy on those happy occasions.
Niche Cabernet Sauvignon 2018
The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of six days to create a good balance between extracting the appropriate tannin for wine structure and retaining fruit drive and aromatics. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak
The Dianne Victorian Sauvignon Blanc 2020
Sourced from premium vineyards across Victoria. After a superb growing season of warm days and cool nights, the grapes were night harvested, then the juice was carefully crushed before fermentation in stainless steel to ensure fruit flavour was focus. After minimal handling the wine was filtered and bottled.
Jack In A Box Bendigo Riesling 2019
Bendigo has a Mediterranean climate with warm, dry summers and mild, wet winters with some variation in meso-climatic conditions due to elevation, slope and aspect. Our vineyards have a brownish loamy sand to clay loam soils over a stony clay base, with significant patches of gold-bearing quartz gravel sub-soils. Overall, the soils are acidic and fairly low in nutrients the tendency to low yields is undoubtedly the reason why the region provides white wines of such concentrated fruit flavours and wonderful acidity. The fruit was crushed and chilled before gentle pressing into stainless steel tanks for fermentation and settling. Bottled early to maintain the quality and purity of the fruit.
Watershed The Farm Margaret River Classic White 2013
Displays aromas of tropical fruit, apricot and peach with a fruity and creamy palate.
Niche Sauvignon Blanc 2020
The fruit was sourced from a single block in the Riverland region of South Australia. The fruit was de-stemmed and pressed immediately after harvest and a cool fermentation was initiated in stainless steel tanks to retain the clean, fresh aromatic fruit characters.
