Technical Notes The Darrell Victorian Cabernet Sauvignon 2019 Sourced from premium vineyards across Victoria’s premium viticultural sub regions. The fruit was crushed then underwent cold macerating. Fermented in open top fermenters with regular pump over’s to extract both colour and tannin. Following another week of maceration the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked with select parcels going into barrel. The wine is aged in older oak then bottled after maturation with minimal fining and filtration. Niche Merlot 2019 The fruit was sourced from premium vineyards located in South Australia. We picked in the cool of night when the fruit had reached its optimum ripeness then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with ta short period of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak. Watershed The Farm Margaret River Classic Red 2016 The fruit used in this blend is sourced from our own vineyards in the Wallcliff and Jindong sub regions of Margaret River. 77.5% Merlot 22.5% Cabernet Franc Glen Eldon Kicking Back Shiraz Cabernet 2017 'Kicking Back' is the way Australians describe relaxing and having a good time with family and friends, usually around a barbeque. So we decided to create a ready to drink style wine called, 'Kicking Back', to celebrate and enjoy on those happy occasions. Normans Holbrooks Road Shiraz 2020 The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with three days of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak. The Colonial Estate Etranger Barossa Valley Cabernet Sauvignon 2018 Grapes were specifically sourced from the area around our favourite sub region of the Barossa – Greenock. Its hard country with the shallow grey sandy soil over red clay producing small bunches of intense, non-herbaceous Cabernet Sauvignon. Cropping levels were low and much of the older vineyards were hand picked and selected by vigneron and winemaker especially for the high fruit intensity of the individual grapes. 2018 was another stand out vintage from a quality point of view low yields meant incredible intensity of flavour and colour, we expect 2018 will go down of one of the best in recent times. We use extreme cold maceration to extract as much natural fruit flavour as possible and use open top fermenters and hand plunge keeping our old-world winemaking philosophy front of mind during the entire process to ensure only the finest wine is aged in barrel for 12 months prior to final blending and minimal filtration.
